Kiwi Mint Smoothie- Healthy Green Smoothies
The last few years have seen a huge surge in the popularity of healthy green smoothies but most of the smoothie recipes focus on incorporating green vegetables. Having studied Chinese medicine on and off through the years, I’ve come to understand the potency and importance of incorporating herbs into our daily diet, in addition to fruits and vegetables. Heart-healthy kiwis are extremely high in Vitamin C and like any of the Asian superfruits (kiwi originates in China), helps lower high blood pressure and high cholesterol. Combined with mint that is great for digestion and cleansing, and White or Green Tea, we have one of the healthiest smoothies ever, not to mention a refreshing and delicious one.

Makes 2 large glasses or 4 small glasses*

Ingredients
3 cups Green or White Tea (cold or at room temp)
1 cup ice cubes
2 kiwis, peeled
1 small green apple, cored and roughly chopped
1 small Asian pear, cored and roughly chopped
1/2 cup (~1 small handful) fresh mint leaves
1 cup fresh raw kale or spinach (optional)
1 heaping tablespoon flax or Chia seeds (optional)

Method

Place all the ingredients together in a blender and blend until completely smooth. Serve immediately.

*This recipe makes enough for 2 large servings which is a good substitute for breakfast or lunch. If you’re drinking this in addition to a regular meal, this recipe is good for 4 smaller serving glasses.
