Sweet & Spicy Beet Salad

I was never crazy about beets but with friends who love it, I created this beet salad recipe to find a happy medium. This easy beet recipe allows the beautiful, vibrant color of the beet and its natural flavors to shine through while still adding the bold, fresh accents I love in Southeast Asian food. The honey also obliterates the bitterness of beets. While great on its own, you can also serve this beet salad as a compliment to any heavy meat, poultry or fish dish.

Serves 4 as appetizer or side salad

~3 cups beets, peeled and finely diced (you can use red or golden beets)
1/4 cup cilantro, finely chopped
1 tablespoon fish sauce
2 tablespoons lime juice (~juice of ½ lime)
2 tablespoons honey
1/2 tablespoon sambal oelek (use your favorite chili sauce)


Mix all the ingredients together in a large bowl. Allow to marinate for about 10 minutes before serving.
