Spicy Green Mango Salad- Easy Thai Salads

Ever since childhood, I’ve loved spicy Thai food, especially dishes like this Green Mango Salad. I never get bored of eating dishes with fresh ingredients that have a full range of robust flavors from the tangy to the sweet, spicy to savory. Incorporating easy Thai salads into every day meals makes healthy eating a no brainer.

Serves 4

Ingredients

2 young green mangoes, peeled and shredded

6 garlic finely minced

1/3 cup cilantro finely chopped

1/3 cup mint finely chopped

1 tablespoon shrimp paste

3 tablespoons fish sauce

Juice of 1/2 large lime (~2 tablespoons)

1/2 teaspoon sugar

3/4 teaspoon ground red chili peppers

Method

In a large mixing bowl, place the shredded green mangoes, garlic, cilantro and mint, tossing lightly to mix evenly.

In a small pan, dry heat the shrimp paste on high heat for about 1 to 2 minutes until slightly smoky and pungent. Remove from heat; cool for a couple of minutes, then add to the mango salad.

Add the fish sauce, lime juice, sugar and ground red chili peppers to the mango salad. Toss everything together until thoroughly mixed. Serve immediately with sticky rice.
