Lychee Ice Cream- Easy Ice Cream Recipes
One of my all time favorite summer fruits is lychee, that sweet, aromatic fruit from Asia with a slightly rough reddish exterior. Since childhood Lychee Ice Cream has been a staple in my family’s household, a delicious, naturally sweet treat for hot summer days. With easy ice cream recipes like this Lychee Ice Cream, you won’t want to go back to store-bought ice cream again when your homemade ice cream is free from preservatives, syrups and added sugars. Lychee Ice Cream will definitely be a favorite of everyone in your household, especially for summer desserts!

Makes ~6 cups

Ingredients
3 cups heavy cream
1 1/2 cups whole milk
1/2 sugar
3 cups lychee (seedless) + for garnish

Method

Pour the milk and 2 cups of the lychee into a blender and blend until smooth. Transfer into your ice cream maker along with the heavy cream and sugar, setting to process.

While the ice cream is processing, chop the remaining 1 cup of the lychee into little chunks. Depending on your ice cream maker, you may be able to add the chopped lychee immediately or you may have to wait until about 5 to 10 minutes before the ice cream is done.

Serve the lychee ice cream with whole lychees or store in a freezer-proof container in the freezer.

Tip: As with any other recipe, it’s always best to use fresh ingredients. However, if you have a hard time finding fresh lychees and must use canned lychees, drain them from the syrup and soak them for at least an hour in ice water to get rid of the “canny” taste.
