Easy Piña Colada- Low Calorie Summer Cocktails
This easy Piña Colada recipe comes from my friends at TasteNirvana, producers of one of the best coconut water lines in America. Contrary to popular belief, when done correctly, Piña Colada is not an unhealthy beverage. In fact, with exception of the dash of alcoholic white rum, this is a pretty antioxidant-filled cocktail with plenty of health benefits including a potent dose of Vitamins A, B complex and C, fiber and calcium. I would stress the importance of using fresh pineapple juice and of course very high quality coconut water like that from TasteNirvana. If you have a hard time finding fresh pineapple juice, you can just make your own by blending equal parts fresh pineapple chunks with water. Believe me, your taste buds and body will thank you for using fresh instead of buying those overly sugared and chemical-laden canned or bottled stuff.

Makes 1 Serving

Ingredients
2 oz. pineapple juice (33 calories)
1 oz. coconut water  (5 calories)
1 oz. white rum (Bacardi Rum = 69 calories)
Ice cubes

Method
Place all the ingredients in a drink shaker and shake for about 30 seconds.  Alternatively, you can place all the ingredients in a blender and pulse until just smooth for about 1 minute. Pour into a serving glass and serve immediately.
