Tri Color Popsicles
It doesn’t get more refreshing, delicious or healthier than this easy fruit popsicle. Perfect for hot summer days when your body craves hydration, a touch of sweetness and something cold. With zero added sugar, your body will love the natural sweetness of ripe fruit blended with nutrient-rich coconut water. Perfect summer treat for adults and kids!

Ingredients
1 1/2 cups coconut water (unsweetened) 
1 cup ripe pineapple chunks
1 cup ripe strawberries, hulled
2 ripe kiwis, peeled and cut into quarters

Method

Using a food processor or blender, pulse 1/2 cup of the coconut water with the pineapple chunks until just smooth. Pour into the popsicle molds, dividing evenly. Set aside.

Repeat with 1/2 cup of the coconut water and strawberries. Pour into the popsicle molds on top of the puréed pineapple, again dividing evenly. Set aside.

Finally, pulse the remaining coconut water with the kiwi until smooth and pour over the puréed pineapple, dividing evenly. Place the popsicle molds into the freezer and freeze for at least 3 hours before serving.

Tip: If you have a hard time removing your popsicles from the molds, simply run the base of the molds under warm water to loosen the popsicles. Make sure not to get any water onto the actual popsicles.
