Lychee Mozzarella Salad
At first glance, you might think lychee and mozzarella to be a strange combination. However, once you taste this amazingly simple recipe that can serve as either an appetizer or light salad, you’ll be hooked. The creaminess of the mozzarella contrasts the tangy dressing while bits of juicy lychee add just a touch of sweetness. This is Asian Fusion at its best!
8 lychee, pitted and chopped into tiny bits
16 bite sized pieces fresh buffalo mozzarella
1/3 cup cilantro
1/3 cup basil leaves
2 to 3 tablespoons lime juice
1/3 cup olive oil
½ teaspoon sea salt
Freshly ground black pepper
Arrange the lychee bits and mozzarella pieces on a serving platter.
Place all the other ingredients in a food processor and pulse until smooth. Drizzle over the mozzarella and lychee. Serve immediately.
