Easy Appetizers- Avocado & Corn Confetti

I didn’t learn to appreciate the mild creaminess of avocado until I was in my late 20’s. Once I did though, I fell completely in love with this super food that contains healthy fats we need for bone and joint health and collagen building. What’s better than doing good for your body while eating yummy food?! This easy appetizer brings together ripe avocado and sweet corn for a great accent to any meal.

Makes 1 medium sized bowl

Ingredients

1 cup fresh corn kernels

1 tablespoon olive oil

2 medium sized ripe avocados, diced

¼ medium sized red onion, diced

½ cup cilantro, roughly chopped

2 tablespoons fresh lime juice

1 tablespoon soy sauce

2 tablespoons plum sauce

½ teaspoon sea salt


Method

In a small pan, heat the olive oil on high heat. Sauté the corn kernels for about 2 minutes. Transfer to a large bowl.

Add in all the other ingredients and toss together gently until thoroughly combined. Serve immediately or store in refrigerator for up to 2 days wrapped tightly.
