Sweet Garlic Almonds- The Perfect Afternoon Snack

I created this recipe one day when I discovered that I had accidentally bought a bag of raw almonds instead of already seasoned ones. Wanting my father to get his healthy dose of nuts, I knew I needed to create a snack that was high in flavor but low in fat. In this recipe, the Kafir lime leaves are the key to creating that unique Southeast Asian vibrancy in the popping flavors. However, if you have a hard time finding Kafir lime leaves, you can substitute lime rinds though the end result won’t be the same. I’ve made Sweet Garlic Almonds for parties and they’re always a huge hit with everybody, even those who don’t usually like almonds.

Makes 1 small bowl

Ingredients

½ lb raw almonds

3 tablespoons olive oil

8 cloves garlic, finely minced

1 large scallion, finely chopped

2 Kafir lime leaves, finely chopped

1 ½ heaping tablespoons Gula Jawa (substitute dark brown sugar)

¾ teaspoon sea salt

Method

In a skillet, heat the olive oil on medium high heat. Sauté the garlic, Kafir leaves and scallions for about 2 minutes until lightly browned.

Add in the almonds and gently toss around for 1 to 2 minutes. Add the Gula Jawa or brown sugar and toss again, using a spatula to mix in the sugar with the almonds. Do this for another 4 to 5 minutes or so until the sugar begins to caramelize and melt together with the almonds.

Remove from the heat. Sprinkle the sea salt over the almonds and place into a serving bowl. Serve warm.
