Sweet Banana Rice Porridge- Easy Breakfast Recipes
All types of porridge are eaten across Asia as a very popular breakfast item. From the salty kinds to the sweet, every Asian nation has its homegrown version of this comfort food. Easy breakfast recipes like this lightly sweetened banana rice porridge comes from my grandfather, who used to make this for me when I felt under the weather. Besides being a great start to the day, this recipe is nutrient rich and great for kids and adults.

Serves 4-6

4 cups water
2 cups cooked white rice
1/2 teaspoon salt
3 cups soy milk
4 teaspoons vanilla extract
Honey for drizzling
2 large bananas thinly sliced


In a medium sized pot, bring the water to a vigorous boil. Add the cooked rice and simmer on medium high heat for 5 minutes, stirring occasionally using a wooden spatula.

Add the salt and soymilk, stirring around the edges and bottom of the pot to ensure that the rice and milk don’t burn. Simmer on medium heat for another 10 minutes or so, stirring occasionally, until the rice has begun to dissolve. If the mixture seems too dry, add 1 cup of soymilk at a time, until a smooth, thick soup consistency is achieved.

Remove from heat. Add the vanilla and stir thoroughly. Ladle into serving bowls. Drizzle honey on top and add the sliced bananas. Serve very warm.
