Best Healthy Desserts- Cantaloupe Popsicles
It’s important to note that in this recipe, I used this nifty little tool for popsicles called Zoku Classic Popsicle Maker. If you’re not familiar with Zoku, I strongly urge you to check them out as making popsicles will not only be more fun, but modernly easy. These classic mini molds are about the size of a standard lollipop, perhaps just a smidgen larger, which is why this recipe calls for such small amounts compared to standard popsicles sizes. We all tend to overeat so these mini popsicles are one of the best healthy desserts we can have. It’s also fantastic to portion control for kids. These 9 mini popsicles all add up to approximately 1 or 1 1/2 regular sized popsicles so you can adjust as necessary if you’re not making mini pops.
1/2 heaping cup ripe cantaloupe, chopped into small chunks
1/2 cup unsweetened soy milk (substitute with any type of milk you like)
Blend the ingredients in a blender or food processor until smooth. Pour into the molds and freeze for at least 4 hours.
