Blueberry Chia Pops- Healthy Popsicle Recipes

With hot summer months, everybody loves a cold, refreshing popsicle so I spend a lot of time developing healthy popsicle recipes. What better way to indulge in a treat than to have a popsicle made of all good-for-you ingredients with no added sugar? I called this Blueberry Chia Pops because of the gorgeous blue-purple hue though admittedly, the popsicle tastes more of banana. Blueberries inherently don’t have a strong flavor so the banana does overtake the flavor. If you prefer omitting the banana, you can increase the amount of blueberries and add in a bit of honey instead, though still, the honey would overpower the very delicate flavor of blueberries.

Makes 4 medium-sized popsicles

Ingredients

1 cup fresh blueberries

1/2 banana

1 heaping tablespoon soaked chia seeds

3/4 cup milk (use any kind you prefer- regular, skim, almond or soy)

Method

Place all the ingredients in a blender or food processor and pulse until just smooth. Pour into popsicle molds and freeze for at least 4 to 5 hours.

Tip: If you have a hard time prying the popsicles from the mold, fill a large bowl big enough to fit the popsicle mold with a few inches of hot water. Submerge the lower half of the popsicle mold in the hot water for just a few seconds and you should be able to slide the popsicles right out.
