Makes 4 Chicken Quarters

Ingredients
4 chicken leg quarters
6 tablespoons sweet soy sauce
4 tablespoons plum sauce
4 tablespoons apricot jam or preserves
3 teaspoons garlic powder
1 teaspoon salt
Freshly ground black pepper to taste

 

Method

Place the chicken legs in a large baking dish or Pyrex dish.

In a small bowl, whisk together the sweet soy sauce, plum sauce and apricot jam until smooth. Pour evenly over the chicken. Dust the garlic powder, salt and pepper over the chicken and allow to marinate for at least 10 minutes, up to overnight in a tightly sealed container in the refrigerator.

Preheat the oven to 375 degrees. Bake the chicken uncovered for 50 to 60 minutes. Serve with warm jasmine rice.
