Quinoa Pancakes with Papaya Salsa

Always on the quest to create simple, delicious and nutritious breakfast dishes, I was thrilled when I stumbled upon this winning Quinoa pancakes after throwing a bunch of ingredients left over in my kitchen together. At first I wasn’t sure if the papaya salsa would go well with the pancakes but it was a match made in breakfast heaven.

Serves 4

Ingredients

2 1/2 cups pancake mix

1 1/2 cup water

1/4 teaspoon salt

¾ cup grated Parmesan cheese

1 cup cooked Quinoa

Olive oil to coat skillet

For the Salsa:

2 heaping cups ripe papaya, diced

½ cup red onion, diced (~ ½ small onion)

2 to 3 tablespoons fresh lime juice

¾ teaspoon sea salt

Method

In a medium sized bowl, gently toss together all the ingredients for the papaya salsa. Place in the refrigerator while preparing the pancakes.

In a large bowl, whisk together the pancake mix, water and salt until smooth. Add the grated cheese and cooked quinoa, mixing together with a spatula.

In a large skillet, heat the olive oil on medium high heat. Ladle small amounts of the pancake batter onto the skillet to form mini pancakes. Cook for about 2 minutes until golden brown. Flip over and cook for another 1 to 2 minutes.  Repeat until all the batter is used.

Place the pancakes on serving plates with the papaya salsa on the side.
