Quinoa Egg Tartlets- Easy Breakfast Recipes

Talk about getting your healthy proteins and vegetables in early in the day- these egg tartlets blast the notion that breakfast has to be time consuming or complicated to taste good and be nutritious. Prep time is all of 5 minutes. These are so delicious and a great way to get kids to eat vegetables in a fun way. Also great for on the go.

Makes 1 dozen tartlets (size of regular cupcakes)

Ingredients

8 eggs

1 cup milk

2 cups cooked quinoa

2 medium sized bok choy, finely chopped

1 teaspoon salt

Freshly ground black pepper to taste

Olive oil

Method

Preheat the oven to 375 degrees. Grease a cupcake baking sheet lightly with olive oil.

In a large bowl, whisk the eggs until smooth and foamy. Add the milk and whisk again briefly. Toss in the quinoa, bok choy, salt and pepper, mixing with a spatula or spoon until thoroughly combined. Ladle the egg mixture into the cupcake baking sheet.

Bake for about 15 minutes until the edges are slightly golden and there’s no more jiggling of the center.  Serve immediately with fresh fruits on the side.
