Creamy Lychee Saketini- Easy Cocktail Recipes
On warm evenings, there’s little else that can cool you down better than the perfect cocktail. Here’s one of my easy cocktail recipes using one of my favorite tropical fruits- lychee, paired with a classic Asian alcohol- sake. Light, creamy and frothy, this is a luscious drink that will liven up your summer party. This Saketini is so popular with my family and friends that I think word has spread to the point where some top hotels are using my idea. Ok, maybe they discovered this cocktail first. Whoever created it first (I hope it was me) created one of the best cocktails ever.
16 lychees + 4 for garnishing
½ cup lychee juice
2 cups crushed ice
1 cup half and half
1 ½ cups creme de sake (chilled)
In a blender, pulse the lychee, lychee juice, crushed ice and half and half until completely smooth. Transfer to a pitcher and add the sake. Stir gently to mix and serve immediately. Garnish each serving glass with a lychee.
