Most of us have had those moments where we don’t know what to do with leftover rice, either from restaurant take-out or from cooking at home. This easy recipe spruces up old rice into something brand new and exciting. Though I use asparagus here, you can actually substitute any of your favorite green vegetables such as Chinese broccoli, kale or bok choy.

Serves 4 to 6

Ingredients
8 slices bacon roughly chopped
12 cloves garlic finely minced
4 shallots, thinly sliced
12 asparagus stalks, ends trimmed, cut into 2-inch pieces on the diagonal
4 cups cooked white rice
1/2 teaspoon salt
White pepper to taste (optional)

Method

In a wok, sauté the chopped bacon on high heat for about 2 minutes until beginning to brown and crisp. Add the garlic and shallots; sauté again for another 1 to 2 minutes or so until the garlic and shallots are lightly browned.

Toss in the asparagus pieces, stir-frying for 1 to 2 minutes. Add the cooked rice, salt and white pepper, tossing for another minute or so until thoroughly combined. Serve warm.
