Banana Bite Fritters aka Asian Fried Banana
Every Asian nation seems to have its version of this classic dessert and who wouldn’t love warm bananas wrapped in a crisp exterior drizzled with sweet condensed milk? Here’s my twist on this ever popular banana fritter, aka Asian Fried Banana, turning it into fun bite sized morsels which make this a very convenient dessert for get-togethers, cocktail parties and kids’ parties.

Makes ~15 Banana Bites

Ingredients
3 bananas, chopped into bite sized chunks
2 eggs
1 cup all purpose flour
1/2 cup tapioca flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup club soda
Vegetable oil for deep frying
Condensed milk for drizzling

Method

In a large bowl, whisk the eggs until smooth. Add both flour, baking powder and salt, whisking again until smooth. The batter will be very thick and heavy.

Finally, add the club soda and whisk gently just until well incorporated and smooth.

In a wok or medium sized frying pot, heat a few inches of oil on high heat. While waiting for the oil to come up to temperature, begin dipping the banana chunks into the batter. Using a slotted spoon, test the temperature of the oil by carefully dropping a small dollop of the batter into the oil. If the oil is hot enough, the batter should begin to bubble up and lightly brown within a few seconds. Carefully place the battered banana chunks into the oil, leaving enough room in between them to turn over. Fry on each side for just about 1 minute or so until lightly golden brown. Drain on a paper towel lined plate. Repeat as necessary with remaining banana chunks.

Place bananas on a serving plate. Drizzle with condensed milk before serving.
