This quick and easy vegetable dish is one of the most popular and classic Chinese recipes across the world. Gently stir-fried Chinese broccoli is full of antioxidants and essential nutrients but the addition of sweet and savory oyster sauce and fragrant garlic creates a vegetarian dish that everybody loves. It’s important not to overcook the broccoli to maintain its rich green hue as well as its nutrients. Remember that even after the vegetables are plated, the inherent heat will continue to lightly cook itself.

Serves 4

Ingredients
12 stalks Chinese broccoli (~1 lb)
2 tablespoons Vegetable oil + 1 tablespoon for sauce
4 tablespoons water
12 cloves garlic minced
4 tablespoons Oyster sauce

Method

Trim approximately one inch off the ends of the broccoli stalks and rinse thoroughly in cold water. Drain.

Heat the oil on high heat in a wok. Carefully add the broccoli and gently stir-fry for about a minute. Lower the heat to medium high, add the water and allow broccoli to sit at 1 minute intervals before stir-frying again. Cooking time should be a total of about 3 to 5 minutes.

Slide the broccoli onto a serving plate. In the same wok, heat the remaining 1 tablespoon of oil on high heat. Add the garlic and sauté for a minute or so until fragrant and just beginning to lightly brown. Add the oyster sauce, stirring quickly to mix. Remove from heat and carefully pour the sauce over the broccoli. Serve immediately.
