Lychee Creamsicles- Easy Popsicle Recipes
There’s nothing quite like the delicious burst of juicy lychees, especially during hot summer months. This past year I’ve become obsessed with creating healthy and easy popsicle recipes to make eating dessert guilt-free. This is one of my very favorite easy dessert recipes that combines the natural sweetness of ripe lychees with antioxidant-rich soy milk. You can substitute any kind of milk here, from almond milk to regular milk; they all turn out great. This Lychee Creamsicle will be popular with both adults and kids. The recipe here was created for use with Zoku mini popsicle molds, which makes 9 mini lollipop sized popsicles or the equivalent of about 1 large popsicle. If you’re using regular sized molds, simply multiply this recipe to however much you need.

1/2 heaping cup lychees
1/2 cup soy milk (substitute any type of milk)


In a blender, blend the lychees and soy milk until smooth with just a few chunks of the lychee remaining. Pour into popsicle molds and freeze for at least 4 hours before removing and serving.
