Serves 4

Ingredients
1 lb fresh okra, ends trimmed and sliced in half lengthwise
4 tablespoons olive oil
10 cloves garlic, minced
1/3 medium onion, finely diced
1 tablespoon finely minced ginger
1/2 teaspoon cumin
1/2 teaspoon garam masala powder
1 tablespoon butter (substitute with more olive oil)
1/2 teaspoon salt
Freshly ground black pepper

Method

In a wok or skillet, heat the olive oil on high heat. Sauté the garlic, onion and ginger for 1 to 2 minutes until fragrant and translucent.

Add the cumin and garam masala, stirring to mix well for just a few seconds. Toss in the sliced okra and butter. Gently toss the okra together with the spices, but allow to rest at the bottom of the pan for half a minute or so in between tosses. After about 2 minutes or so, add in the salt and pepper, toss quickly and transfer to a serving plate. Serve immediately with warm jasmine or basmati rice.
