Citrus Fish Kabobs
One of the best parts of hot summer months is marrying tangy citrus flavors with simple fish kabobs to create a simple but super flavorful appetizer. Put a bunch of these skewered fish on a plate with a side salad or a light pasta and you’ve got a healthy main course. Any firm white fish will do just fine for this recipe.
Serves 2 as Main Course or 4 as appetizer
Ingredients
1 lb Alaskan cod (substitute any firm white fish)
1 cup orange juice
Olive oil for drizzling
1/4 + a pinch of sea salt
Freshly ground black pepper
Finely chopped cilantro for garnish (optional)
Skewers
Method
Cut the cod into one-inch cubes. Place in a large bowl or deep dish. Pour the orange juice over the cubed fish. Marinate for at least 15 minutes, up to 30 minutes.
Slide 2 to 3 fish cubes onto each skewer.
Heat a drizzle of olive oil in a non-stick skillet on medium high heat. Place the skewers in the skillet leaving a bit of room between them. You may have to do this in batches depending on the size of your skillet. (Each time you do a batch, drizzle a bit of olive oil to coat the pan). Cook the fish for about 1 1/2 minutes on each side until lightly golden brown.
Sprinkle with the salt and pepper. Garnish with chopped cilantro. Serve immediately.
