Ginger Tea
{Ginger helps to stimulate digestion and may help to reduce high blood pressure and high cholesterol; it heats the body and is particularly good when ill with a cold, though is not good for sore throats.}
Serves approximately 4 mugs
Ingredients:
-7 cups of water
-1/2 cup of packed ginger slices (with or without skin)
-1/4 cup sugar (optional)
***Make sure that the ginger is not old, otherwise you will end up with very bitter-tasting tea. The flesh of the ginger should be a bright yellowish color. A dull tan color signals old ginger.
Method:
-bruise the ginger with meat pounder slightly to bring flavors out
-bring water and ginger to boil on high heat; lower heat to medium low and simmer at a rolling boil for approximately 15 to 20 minutes until light brown and fragrant
-add sugar and stir well; serve warm to hot
Lemongrass Tea
{Lemongrass has been shown to have anti-fungal properties as well as being good for releasing tension and stress. It also has been known to bring down fevers, relieve congestion and treat infectious diseases. Some believe that it also aids digestion and cleans the liver and colon.}
Serves approximately 4 mugs
Ingredients:
-7 cups of water
-1/2 cup of packed lemongrass, thinly sliced
Method:
-bring water to vigorous boil
-take off heat and let water cool for 10 minutes
-pour sliced lemongrass in and stir well; let steep for 15 minutes
-strain and serve
Mint Tea:
{Mint has a wide variety of health properties. It is great for breath freshening and soothing stomach pains. Like lemongrass, mint is also known to relieve congestion. It aids in digestion and behaves as a diuretic.}
Serves approximately 4 mugs
Ingredients:
-7 cups of water
-1/2 cup packed mint leaves
Method:
-bring water to vigorous boil
-take off heat and let water cool for 10 minutes
-stir in mint leaves and let steep for 10 to 15 minutes
-strain and serve
