Mint Chocolate Chip Ice Cream

This ice cream flavor used to be one of my favorites as a child until I grew up and realized what awful ingredients big name ice cream brands put into it. Remember that weird green hue? It certainly wasn’t from using real mint. Recently, I got so tired of not being able to find REAL Mint Chocolate Chip Ice Cream anywhere that I decided to create my own recipe. Give this to your kids and they’ll never even know that I added nutrient-rich raw kale to this recipe. You can’t taste it at all! I’m a firm believer in indulging in real desserts every now and then but who says we can’t add in a secret good-for-you ingredient when you can’t taste it AND it gives the ice cream a beautiful, NATURAL green color.

Makes ~2 Quarts (~6 to 7 cups)

Ingredients

3 cups heavy cream

1 1/2 cups whole milk

1/2 cup sugar

2 large handfuls fresh mint leaves, finely chopped (~ 1 heaping cup)

1 small handful fresh kale (preferably organic)

1 cup roughly chopped dark chocolate

Method

Place 1 handful of the mint leaves, the kale and the milk into a blender and blend until completely smooth. Transfer into an ice cream maker along with the heavy cream and sugar and follow the manufacturer’s instructions.

Depending on your ice cream maker’s instructions, you may be able to add the chopped mint leaves and the chocolate all together at the beginning or like most ice cream makers, you’ll add it about 5 to 10 minutes before the ice cream is set.

Store ice cream in an air-tight freezer-proof container or serve immediately.
