Serves 4 as main course

Ingredients
2 lb raw shrimp, tails-on and deveined
1 cup tamarind concentrate or paste
4 tablespoons honey
1 tablespoon olive oil
½ teaspoon sea salt
4 to 6 Kafir lime leaves, finely sliced (substitute with finely grated lime zest)

Method

In a large mixing bowl, whisk together the tamarind, honey and olive oil until smooth. Toss in the shrimp and coat thoroughly. Allow to marinate for 10 minutes.

Heat a large skillet or pan on high heat. Place the marinated shrimp on the skillet and cook for just about 1 minute on each side until bright pink/orange. (Alternatively, you can also grill the shrimp). Remove the shrimp and place on a serving platter.

Sprinkle the sea salt and slice Kafir lime leaves evenly over the shrimp. Serve warm.

Tip: For a party setting, you can skewer the shrimp before cooking for easy serving.
