This cooling Cucumber Avocado Soup incorporates antioxidant and nutrient rich soy bean milk to create a powerful and delicious starter to any meal. By itself, this easy to make soup is also an excellent source of vitamins to help fight off common fevers, flu, indigestion, upset stomach and canker sores. Savory and refreshing, everybody will be begging for more of this simple concoction. 

Serves 4 to 6

Ingredients
1 large cold cucumber, peeled and seeded, roughly chopped
2 medium sized ripe avocados, seeded and scooped out
1 small to medium sized shallot, peeled and minced
2 cups cold soymilk
¾ teaspoon salt
Freshly ground black pepper
Sprigs of cilantro or sliced scallions to garnish

Method

Place all the ingredients in a food processor or blender and pulse until smooth. Pour into individual serving bowls, garnishing with sprigs of cilantro or chopped scallions and serve immediately.
