Mini Frozen Chocolate Banana Skewers
Remember childhood days spent at carnivals or fairs? One of my favorite parts of going to a place like Disneyland was getting the frozen banana popsicles. Here’s my twist on that childhood favorite, replacing milk chocolate with a healthier but no less yummy rendition of cocoa and vanilla yogurt. Here’s a summer treat to beat the heat that tastes divine but is also good for you.

Makes 8 to 10 mini skewers

Ingredients
2 ripe bananas, cut into 1 1/2 inch pieces
1/2 cup vanilla yogurt
1 ½ tablespoons honey
2 tablespoons cocoa powder
¼ cup crushed almonds or walnuts (optional)

Method

In a medium sized bowl, mix the yogurt, honey and cocoa powder until thoroughly combined.

Lay the banana pieces on a tray lined with wax paper. Carefully, insert the mini skewer into each banana piece. Lower the banana into the yogurt mixture to thoroughly coat. Sprinkle the crushed almonds on the banana. Set back onto the tray and repeat until all the bananas are coated.

Freeze the bananas on the tray for about 1 hour to 1 ½ hours. Serve immediately.

Tip: If freezing for much longer than the recommended time, make sure to thaw the banana skewers for 10 minutes before serving.
