4 heaping cups mixed greens (you can also use romaine lettuce instead)
4 cups fresh spinach leaves, rinsed and drained
2 scallions, ends trimmed and chopped roughly
2 seedless oranges, peeled and chopped into small chunks
1 tablespoon miso paste
5 tablespoons orange juice
1/3 cup olive oil
Freshly ground black pepper
In a large salad bowl, mix the greens, spinach, scallions and oranges, tossing together. Set aside.
In a small pan, dry roast the miso paste on medium heat, mashing and flipping around for just about 1 to 2 minutes until slightly golden. Remove from heat and allow to cool in a bowl for about 5 to 10 minutes.
Add the orange juice to the miso, whisking vigorously until smooth. Slowly drizzle the olive oil into the miso orange mixture, whisking continuously until well combined. Pour the dressing over the salad right before serving, tossing together thoroughly. Dust freshly ground black pepper over the salad if using.
