Serves 4

1 lb dry rotini pasta (substitute with any short pasta)
1 tablespoon olive oil
3 cups grated mixed cheese (any combination of 3 cheeses- mozzarella, fontina, havarti, gouda, etc.)
3/4 cup milk
1/2 teaspoon salt
Freshly ground black pepper
1 tablespoon garlic powder
1/2 tablespoon onion powder
1/3 cup sweet soy sauce
1 1/2 tablespoons sambal oelek (substitute any spicy chili sauce)


In a large pot, bring water to boil. Cook the pasta according to package directions, typically 8 to 10 minutes until al dente. Drain thoroughly and return to the pot on medium heat.

Add the olive oil, grated mixed cheese, milk, salt, pepper, garlic powder and onion powder. Stir gently until thoroughly combined and cheese is melted for about 1 to 2 minutes. Place the pasta into a serving bowl.

In a small bowl, mix the sweet soy sauce and sambal oelek until thoroughly combined. Drizzle over the pasta and serve immediately.
