For a yummy, super fast and easy stir-fry, you can’t get better than this. You can even pre-marinate the chicken and keep it in a properly sealed container in the fridge for a few days, stir-frying only what you’ll eat that day.

Serves 4

2 lbs chicken breast, chopped into small cubes
4 tablespoons brown sugar (substitute honey)
1 1/2 tablespoons sambal oelek
1 1/2 tablespoons soy sauce
3 tablespoons olive oil
Lime wedge for garnish


In a large bowl, add the brown sugar, sambal oelek and soy sauce to the chicken and mix well. Allow the chicken to marinate for about 10 minutes.

In a wok or skillet, heat the olive oil on high heat. Sauté the chicken for 4 to 6 minutes until golden. Serve with white rice and garnish with lime wedge.
