Lychee Watermelon Granita
Hot tropical days are perfect for indulging in this sinless fruity dessert. Lychee Watermelon Granita is incredibly easy to prepare and is a huge hit with children and adults. There are two versions of this non-fat, low calorie granite; one for kids and one for adults. Simply remove the sake for the children’s version. You can make the Granita days in advance of serving it and properly stored, it will keep for several weeks. Naturally sweet and refreshing.

Serves 8 to 10

Ingredients
1 large can lychee, drained from the syrup (use fresh lychee if possible, about 20 pieces pitted)
1 pound watermelon with rind (equal to approximately 2 heaping cups of chopped fruit)
1 cup orange juice (use fresh if possible)
1/4 teaspoon salt
1/2 cup sake

Method

Place lychee, chopped watermelon, orange juice and salt in a blender (or food processor). Blend for about 30 seconds or until the mixture is very smooth. Remove from the blender and place in a large Pyrex or ceramic pie dish. (The mixture should not be more than 1 inch deep or it will take too long to freeze and the texture won’t be that of a Granita).

Add the sake and stir with large spoon to mix well.

Freeze for 2 hours or until firm. Before serving, using a fork, scrape the ice until soft shavings appear. Spoon into serving glasses and serve immediately.
