Even people who aren’t crazy about spinach love this dish when I make it. It would take too long to go on about the health benefits of spinach with its sky high levels of vitamin A, vitamin K, folate, magnesium, calcium and fiber. Enough said. A quick stir-fry with lots of garlic and fresh ground black pepper creates an unbeatable vegetable dish that’s ready in minutes.
Serves 4-6

Ingredients
2 packs fresh baby spinach, washed and thoroughly drained
3 tablespoons olive oil
15 cloves garlic, finely minced
3/4 teaspoon salt
Freshly ground black pepper to taste

Method

In a wok, heat the olive oil on high heat. Sauté the garlic for 2 to 3 minutes until golden brown and crisp.

Carefully add the spinach leaves one big handful at a time. Splattering will occur. Quickly stir-fry the spinach. Once the spinach has significantly wilted after 1 minute or so, add the salt and pepper. Sauté quickly for just another minute or so. Serve immediately.
