This rice dish is so incredibly easy to make but looks sophisticated and tastes divine. Caution though- this is definitely not for the calorie-conscious. This rice is so heavenly though that every now and then, it’s well worth every last sinful calorie. Some friends have tried to substitute olive oil for the butter but to me, when you’re going to eat sinful, let’s go all the way. There’s nothing that can equal the taste of true butter and what an exotic combination with the fresh dill.

Makes 1 large pot of rice

Ingredients
3 1/2 cups fragrant jasmine rice
8 cups water
1 stick of butter (8 tablespoons)
2 teaspoon salt
3/4 cup dill, rinsed, drained and roughly chopped

Method
Cook rice as instructed in rice cooker (I like a 2 1/2 to 1 ratio of water to rice).
Once the rice has cooked, unplug if using an automatic rice cooker and allow to cool for 15 minutes then mix with the butter, salt and dill thoroughly. Serve very warm.
