I love combining different favorite foods in new ways. Strawberry and reduced balsamic vinegar is a classic as are honeydew and prosciutto. But all four together? Who would’ve thought that these fresh fruits with salty prosciutto and sweet balsamic syrup is an addictive combination and an incredibly fresh opener to any dinner. It’s super easy, super fast but looks and tastes so sophisticated that friends and family will wonder if you didn’t sneak away to culinary school.

Serves 4

Ingredients
12 bite sized pieces of honeydew melon
8 medium size strawberries, rinsed and hulled
8 slices of prosciutto
1 cup of balsamic vinegar

Method

Slice the strawberries in half lengthwise; set aside.

In a small pot, bring the balsamic vinegar to a gentle simmer on medium heat until reduced to a thick, syrup consistency (about 8 to 10 minutes).

Arrange the honeydew and strawberries; 3-4 of each per plate. Arrange the prosciutto in a small mound in the center of each plate. Drizzle the balsamic reduction gently but quickly over all the fruit and prosciutto. Serve immediately.
