With super busy schedules these days, everybody is in a constant rush with little time to devote to cooking nutritious meals at home. This easy Salmon recipe is as quick as they come. With basic ingredients and just a few minutes of prep time, you’ll have a beautiful healthy dish that is packed with rich flavors that even kids love.

Serves 4

Ingredients
4 salmon fillets (skin on)
8 tablespoons orange juice
2 tablespoons mirin
2 tablespoons miso paste
1 tablespoon olive oil
1 teaspoon salt
Generous sprinkling of freshly ground black pepper

Method

Preheat the oven to 375 degrees.
Rinse the salmon and pat dry with a paper towel. Line a baking sheet with aluminum foil and place salmon flesh side up on the foil. Fold four sides of the aluminum to create a barrier around the fish so the sauce does not leak.

Spoon the orange juice and mirin over the fillets to coat evenly. Use the back of the spoon to coat flesh side of the fish with miso paste evenly and thoroughly. Sprinkle pepper generously over the fish.

Turn fillets over so the skin side is up. Drizzle olive oil over the skin. Sprinkle salt and pepper evenly over the olive oil coated skin.
Bake for 8-12 minutes (+/- 10 minutes for every inch of thickness of salmon). Turn oven to high broil and broil for 2-3 minutes until skin is golden brown and crisp. Serve with warm rice or side of sautéed vegetables.
