This is one of those dishes that both grown-ups and kids love. Preparation couldn’t be easier or quicker. I love this dish for the fact that you get three in one: protein, vegetables and dairy. With absolutely no oil for cooking and using skim cheese, this is a fabulous treat that tastes sinful but is good for you.

Serves 4

Ingredients
4 boneless, skinless chicken breasts
Juice of 1/2 lemon
1/2 package (approximately 5 ounces) spinach leaves, washed and drained
4 ounce block of part-skim mozzarella cheese sliced into 1/4 inch thick
1/2 teaspoon salt & 1/8 teaspoon for sprinkling
Freshly ground black pepper to taste

Method
Preheat the oven to 375 degrees.
Rinse the chicken thoroughly and trim off excess fat; place on aluminum foil lined baking sheet. Pour the lemon juice over both sides of the chicken.

Sprinkle 1/2 teaspoon salt and pepper on both sides of chicken evenly. Top the chicken with a handful of spinach leaves; sprinkle 1/8 teaspoon salt over spinach evenly.

Place 3 to 4 slices of mozzarella on top of the spinach on each chicken. Bake for 30 minutes until the mozzarella is a crusty golden brown. Serve as is or on top of classic tomato sauce.
